The definition of preservative-free (PF) wine is that it doesn’t contain sulphur dioxide – the preservative used to protect wine from bacteria and oxidation. In Australia, most organic and biodynamic wines still contains minimal sulphur dioxide and will be labelled ‘contains sulfites’. PF wines rely on naturally occurring sulfites alongside alcohol, tannins and acidity as a preservative. (Contrary to popular belief, sulphur dioxide is not the cause of headaches, unless you have a specific allergy.)
