A delicious blend of Barbera, Tempranillo, Dolcetto, Refosco and Sangiovese. All components were fermented separately in open tubs and hand plunged. A combination of selected yeast and wild yeast were used across the different components. Each batch was pressed pressed directly to a variety of vessels, including old oak, stainless steel and flexcubes for malolactic fermentation and maturation. Components were kept separate until blending and filtration. Bottled November 2021.
