Season
Leading into the 2021 vintage saw fairly ideal growing condition that where warm and dry, Early February and January saw a cooling off and significant rain events that slowed down ripening and retained natural acidity. The only downfall with these conditions was the added pressure in the vineyards to control potential fruit split and disease. Fortunately our vineyards were unaffected and the fruit coming in was pristine.
Harvest Date March 2021
Winemaking
Machine harvesting during the cool of the night in order to maintain optimal fruit integrity. The grapes are destemmed, crushed and pressed under cool gentle conditions. The unfermented grape juice is soaked on its skins for 5 hours prior to the juice being pressed off to a holding tank. Cold fermentation ensures that the fruit flavours and aromas are conserved in the finished wine.
Tasting Notes
This Rosé is fine and beautifully balanced. It is full of strawberry and cream, with some lovely candy musk notes. This rosé spends three months in barrel, on lees, to develop structure and complexity.
